Review: The Vegetable Baking Book – Lina Wallentinson

Remove the cover from The vegetable baking book then the book ‘Baking with vegetables’ from 2021 will be published there. The vegetable baking book is therefore nothing other than a republication of that book. Old wine in new bottles, so to speak. Perhaps put back on the market because healthier food is becoming an increasingly important item. ‘Hiding’ vegetables in baking can help you approach the daily recommended amount of vegetables. The book contains more than 50 recipes that always include a fair amount of vegetables. These are often beans, lentils or peas, but (sweet) potatoes, carrots, pumpkin, parsnips and beetroot also appear to be suitable, as well as spinach (beautifully green) and tomato (beautifully red).

To me, most of the recipes did not sound very appealing: beetroot crackers, dark bean rolls, carrot porridge or rye bread with celeriac. lentils and hazelnuts. So no sweets, but mainly alternatives for breakfast or lunch. It must be said that Lennart Weibull’s photos make all the breads, crackers and cakes look delicious and yes, I would really like to try a potato tartelette with sweet onion and tomatoes. In any case, a nice dish in which cold potatoes are mixed with cornmeal for the base. The topping consists mainly of onion, tomato and cheese.

Still, I wanted to try something completely different myself, so I opted for a coffee bread with black beans. Unfortunately it wasn’t easy. Not that the more than 200 grams of black beans made it so unappealing, but there was very little flavor to the coffee bread in the first place. I won’t be making it again anytime soon.

For the next baking I chose something less exciting. A tomato focaccia with feta and cherry tomatoes, where I left out the feta because I don’t like it. It wasn’t part of the dough recipe anyway. The idea of ​​this focaccia is not new. I had eaten a dough in which you replace the water with sieved tomatoes before. The taste of tomatoes then remains only very slightly present. The baked cherry tomatoes provide the most flavor. Fortunately, this focaccia was a success and it was sold at a rapid pace here in the house. A beautiful revenge from the Swedish Lina Wallentinson.
