Sandra Bekkari is back. In her latest cookbook Healthy weight mission she shows again that healthy eating is something to enjoy. “It’s not about numbers on the scale, it’s about a healthy body,” she says. This will be a summer of enjoying fresh, tasty dishes that are also kind to your body. As a preview: four recipes, from breakfast to television snack.

Sneaky Snickers Overnight Oats

For 2 people – 10 minutes + 1 night in the refrigerator

Necessary

  • 50 g oatmeal, fine
  • 1 tbsp chia seeds
  • 4 tbsp natural yoghurt
  • 200 ml + 60 ml plant-based drink/milk
  • 2 medjould dates, pitted
  • 1 tbsp peanut butter
  • 30 g dark chocolate (70% cocoa)
  • 1 tbsp unsalted peanuts, coarsely chopped

Doing

  1. Mix the oatmeal with the chia seeds, yogurt, 200 ml plant-based drink/milk and mix well. Divide between 2 bowls.
  2. Put a dash of plant-based drink/milk (60 ml) in the cutter and mix with the dates and peanut butter into a smooth paste.
  3. Put the paste on the oatmeal porridge.
  4. Melt the chocolate in a bain-marie and pour over the peanut butter mixture.
  5. Place in the refrigerator overnight.
  6. Finish with coarsely chopped peanuts.

Summer meatloaf with bell pepper and green vegetables

For 2 people – 20 minutes

Necessary

  • small red onion, finely chopped
  • 1 clove garlic, crushed
  • 1 zucchini, ¼ in small cubes, the rest in pieces
  • 1 sweet pointed pepper, cut into small pieces
  • 300 g mixed minced meat
  • 1 egg yolk
  • 3 tbsp oat flour
  • 150 g snow peas
  • 250 g broccoli, in floretsDried herbs
  • 2 tsp ras el hanout, 1 tsp Italian herbs

Doing

  1. Preheat the oven to 180°C.
  2. Fry the red onion and garlic in olive oil. Add the zucchini cubes and pepper and stir-fry for about 3 minutes.
  3. Mix the minced meat with the egg yolk, oat flour and stir-fried vegetables. Season with ras el hanout, salt and pepper. Form into a meatloaf with damp hands.
  4. Bake the meatloaf in the oven for about 35 minutes.
  5. Stir-fry the snow peas, broccoli and the rest of the zucchini in olive oil. Season with Italian herbs, salt and pepper.

Hamburgers with sweet potato and a fresh sauce

For 2 people – 15 minutes

Necessary

  • 8 slices of sweet potato (1 cm thickness), with skin
  • 250 g minced chicken
  • 2 mini heads of romaine lettuce
  • 1 tomato, finely sliced
  • ½ red onion, finely slicedFor the sauce
  • ½ avocado, 3 sprigs of fresh basil, 1 clove of garlic, 3 tbsp yogurt, 1 tbsp lemon juice, pinch of chili flakesDried herbs
  • pinch of chili powder (or paprika hot), 1 tsp madras curry powderFor that
  • 100 g mixed leaf lettuce, 250 g cherry tomatoes

Doing

  1. Preheat the oven to 180°C.
  2. Place the sweet potato slices on a baking tray, drizzle with olive oil and season with chili powder. Place in the oven for 20 minutes or until just done.
  3. Season the minced chicken with curry powder, salt and pepper and roll into 8 balls. Flatten the balls into patties of 1 cm thick. Heat a dash of olive oil and fry the hamburgers until done and light golden brown.
  4. In the meantime, mix all the ingredients for the sauce and add a pinch of fleur de sel.
  5. Make towers with the sweet potato slices, hamburgers, lettuce leaves, tomato slices, red onion and the sauce.
  6. Serve the burgers with extra salad and cherry tomatoes (and the rest of the sauce).

Brownie with cherries

6 pieces – 15 minutes

Necessary

  • 70 g dark chocolate (70% cocoa)
  • 20 g cocoa powder
  • 1 tsp espresso powder
  • 3 tbsp maple syrup
  • 2 eggs
  • 30 g almond flour
  • 100 g pitted fresh cherries, halved

Doing

  1. Preheat the oven to 175 °C.
  2. Melt the chocolate and 70 ml olive oil in a bain-marie. When the chocolate has just melted, add the cocoa powder, espresso powder and maple syrup. Stir everything well and let it cool down.
  3. Separate the eggs. Beat the egg yolks until fluffy. Beat the egg whites separately with a pinch of salt.
  4. Mix the egg yolks into the melted chocolate. Add the almond flour and stir well.
  5. Now add the egg whites and stir everything very carefully into a smooth batter.
  6. Pour into a baking tin (16 x 13 cm) lined with baking paper and press the cherries into the batter.
  7. Bake in the oven for about 20 minutes.
