We love corn soup because of that delicious natural sweetness! This soup recipe is a handy basic recipe that can be made quickly with ingredients you probably have in the cupboard. Perfect for an easy meal.
Ingredients
For 4 persons:
350 grams of canned corn
1 large white onion
1.5 cloves of grated garlic
600 milliliters of chicken stock
1.5 teaspoon coriander seeds
1 teaspoon chili powder
1.5 teaspoon cumin
Salty
Pepper
Olive oil
1 jalapeño pepper
1/2 bunch of coriander
This is how you make it:
Chop the onion and fry in a high pan with a little olive oil until the onion is translucent.
Add the grated garlic, coriander powder, chili powder, salt and cumin powder to the pan and fry for a few minutes.
Add three quarters of the (drained) corn and fry.
Add the chicken stock to the pan and bring to the boil.
Puree the mixture with a blender (or hand blender) until smooth.
Strain the soup for a fine structure. Add the remaining corn to the strained soup. Season the soup with salt and pepper.
When serving the soup, spoon half a tablespoon of sour cream onto the soup, garnish with fresh coriander leaves, thinly sliced jalapeño pepper and a little olive oil.
