What We’re Eating Today: Swirl banana bread | Cooking & Eating

A banana bread with two colors and filled with hazelnuts and dates. This delicious banana bread is perfect as a snack, snack or treat. It’s almost too beautiful to eat.

– 5 dates
– 100 g unsalted butter
– 150 g light brown caster sugar
– 50 ml whole milk
– 3 eggs
– 1 tsp vanilla extract
– 4 ripe bananas
– 300 g flour
– 1 tsp baking powder
– Pinch of salt
– 30 g unsalted hazelnuts
– 30 g cocoa powder

Preparation method

Preheat the oven to 180°C and line a cake tin with baking paper. Deseed the dates and let them soak in lukewarm water for 5 minutes.

Melt the butter and add it to a bowl together with the caster sugar. Mix with a hand mixer or food processor for 1 minute on the lowest setting. Add the milk, eggs and vanilla extract while whisking and mix for 1 minute on medium speed. Mash ¾ of the bananas and add. Mix for 1 minute on the highest setting.

Fold the flour, baking powder and a pinch of salt into the batter. Coarsely chop the hazelnuts and cut the dates into pieces. Fold through the batter.

Divide the batter into two equal parts over two bowls. Add the cocoa powder to one bowl and fold into the batter.

Now spoon 1 tbsp of the white batter into the center of the cake tin, followed by 1 tbsp of the brown batter into the center of the cake tin. Repeat until both mixing bowls are empty. Cut the remaining banana in half lengthwise and place the inside side up on top. Place the banana bread in the oven for 45 minutes. Let it cool slightly before slicing.
