Knokke-HeistFormer star chef Stefan Billiau (58) and his wife Lut Maenhout (59) will close the doors of Bistrotheek Billiau in the Dumortierlaan in Knokke-Heist at the end of this week. Until 2013, they ran star restaurant De Oosthoek, after which back problems almost forced the hostess to stop. Eventually they started a new, smaller-scale business where a Michelin star was no longer an ambition. “The tears of the regular customers prove that we have achieved something over the years”, says Lut, who has every confidence in the new owners Pascal Jekel and Phusita Boonson.
